Ingredients
For Kadai Masala:
Coriander seeds: 2 tbsp
Dried red chilies: 2-3
Cumin seeds: 1 tsp
Black peppercorns: 1/2 tsp
For the Gravy:
Paneer: 250g (cubed)
Capsicum: 1 large (cubed)
Onions: 2 medium (finely chopped)
Tomatoes: 3 large (pureed)
Ginger-garlic paste: 1 tbsp
Green chilies: 2 (slit)
Red chili powder: 1 tsp
Turmeric powder: 1/2 tsp
Garam masala: 1/2 tsp
Kasuri methi: 1 tsp (crushed)
Fresh cream: 2 tbsp (optional)
Oil or ghee: 3 tbsp
Salt: to taste
For Garnish:
Fresh coriander leaves: 2 tbsp (chopped)
Step-by-Step Instructions
Step 1: Prepare the Kadai Masala
Dry roast coriander seeds, dried red chilies, cumin seeds, and black peppercorns in a pan until aromatic.
Let it cool and grind into a coarse powder. Set aside.
Step 2: Cook the Base Gravy
Heat oil or ghee in a kadai (wok). Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté for a minute.
Stir in tomato puree, red chili powder, turmeric, and salt. Cook until the oil separates from the mixture.
Step 3: Add Vegetables and Spices
Add cubed capsicum and cook for 2-3 minutes.
Mix in the freshly prepared kadai masala, garam masala, and kasuri methi.
Step 4: Add Paneer
Gently fold in the paneer cubes and green chilies.
Cook for 2-3 minutes on low heat to allow the flavors to blend.
Step 5: Finishing Touches
Stir in fresh cream (optional) for a richer flavor.
Garnish with chopped coriander leaves.
