  • Capsicum: 1 large (cubed)

  • Onions: 2 medium (finely chopped)

  • Tomatoes: 3 large (pureed)

  • Ginger-garlic paste: 1 tbsp

  • Green chilies: 2 (slit)

  • Red chili powder: 1 tsp

  • Turmeric powder: 1/2 tsp

  • Garam masala: 1/2 tsp

  • Kasuri methi: 1 tsp (crushed)

  • Fresh cream: 2 tbsp (optional)

  • Oil or ghee: 3 tbsp

  • Salt: to taste

For Garnish:

  • Fresh coriander leaves: 2 tbsp (chopped)

Prepare the Kadai Masala

Step-by-Step Instructions

Step 1: Prepare the Kadai Masala

  1. Dry roast coriander seeds, dried red chilies, cumin seeds, and black peppercorns in a pan until aromatic.

  2. Let it cool and grind into a coarse powder. Set aside.

Step 2: Cook the Base Gravy

  1. Heat oil or ghee in a kadai (wok). Add chopped onions and sauté until golden brown.

  2. Add ginger-garlic paste and sauté for a minute.

  3. Stir in tomato puree, red chili powder, turmeric, and salt. Cook until the oil separates from the mixture.

Step 3: Add Vegetables and Spices

  1. Add cubed capsicum and cook for 2-3 minutes.

  2. Mix in the freshly prepared kadai masala, garam masala, and kasuri methi.

Step 4: Add Paneer

  1. Gently fold in the paneer cubes and green chilies.

  2. Cook for 2-3 minutes on low heat to allow the flavors to blend.

Step 5: Finishing Touches

  1. Stir in fresh cream (optional) for a richer flavor.

  2. Garnish with chopped coriander leaves.
