Bhindi Masala Recipe – A Flavorful Indian Dry Vegetable Dish
Bhindi Masala (also known as Okra Masala) is a simple yet delicious dry curry made with tender okra (bhindi), sautéed in spices and cooked until crisp. It pairs well with roti, naan, or rice.
Ingredients
For the Bhindi Masala:
Bhindi (okra): 250g (washed, dried, and cut into 1-inch pieces)
Onion (finely chopped): 1 large
Tomato (chopped): 2 medium
Green chilies: 2 (slit)
Ginger-garlic paste: 1 tbsp
Red chili powder: 1 tsp
Turmeric powder: 1/2 tsp
Coriander powder: 1 tsp
Garam masala: 1/2 tsp
Cumin seeds: 1/2 tsp
Salt: to taste
Fresh coriander leaves: for garnish
Oil: 2 tbsp
Step-by-Step Instructions
Step 1: Prepare the Bhindi (Okra)
Wash the bhindi (okra) thoroughly, dry them using a kitchen towel, and cut them into 1-inch pieces.
Step 2: Cook the Bhindi
Heat oil in a large pan or kadhai. Add the chopped bhindi (okra) and sauté on medium heat for 7-8 minutes. Stir occasionally to avoid sticking or burning.
Once the bhindi becomes slightly crisp, remove it from the pan and set it aside.
Step 3: Prepare the Gravy
In the same pan, add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté for another minute.
Stir in chopped tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook the masala until the oil separates from the tomatoes and the mixture thickens.
Step 4: Combine Bhindi with Gravy
Add the cooked bhindi to the pan with the tomato-onion masala.
Stir well, ensuring the bhindi is coated with the spices.
