Oil or ghee: 3 tbsp
Onion (finely chopped): 2 large
Tomatoes (chopped): 3 medium
Green chilies: 2 (slit)
Ginger-garlic paste: 1 tbsp
Red chili powder: 1 tsp
Coriander powder: 1 tsp
Turmeric powder: 1/2 tsp
Garam masala: 1 tsp
Cumin seeds: 1 tsp
Salt: to taste
Water: 1-1.5 cups (adjust as needed)
Fresh coriander leaves: for garnish
Step-by-Step Instructions
Step 1: Marinate the Mutton
In a large bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, lemon juice, and salt.
Add the mutton pieces and coat them well.
Cover and marinate for at least 1-2 hours, or overnight for best results
Step 2: Prepare the Curry Gravy
Heat oil or ghee in a large pot. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and slit green chilies, and sauté for another minute.
Stir in chopped tomatoes and cook until soft.
Add red chili powder,
coriander powder, turmeric, and salt. Cook for 2-3 minutes until the masala is well-cooked and the oil begins to separate.
Step 3: Cook the Mutton
Add the marinated mutton to the pot. Sauté the mutton with the masala for 5-7 minutes.
Add water and mix well.
Cover and cook the mutton on low heat for 40-45 minutes, or until the mutton becomes tender and the curry thickens. You can also pressure cook for 3-4 whistles for faster cooking
